First off, Thank you whoever is reading this for helping with our meals. The next month will be difficult for us since I have been diagnosed now with a stain of Mono(not the kissing one)and two other viruses, which seem to be managing okay. Still dealing with side effects of the transplant medication as well. Ooooh boy. Mac and I were able to prepare things for us before but it’s gotten much harder with my lack of energy. Also, Mac, my main man and main help, has two exams in two weeks and one critical course that he must finish in the next month. If you’ve been a student and encountered exams before you understand that pressure. Not to mention adding a dependent into the combo. It helps us a great deal to have your support in this way. Meals we can freeze are great and ready to serve is also great. I am not doing take out to much because for some reason (other than Pad Thai. Win.) I can’t seem to keep it down. This might be a blessing in disguise. I can’t eat processed foods. Often I must remind myself that my insides have literally been reborn. You might have noticed I added chicken. As a pescatarian, the doctors found I still needed more protein in my diet while I recover. So for now I have added chicken. I’m sure that makes cooking ideas a lot easier. I have made a list of items with Mac and I are happy eating. Mac has an aversion to mushrooms but if it suites the recipe just leave them whole for me to eat. So here is a cheat sheet of ideas. Feel free to come up with your own ideas too. ***IMPORTANT NOTE*** Food Safety is a MUST. I am sure most people follow food safety but for me it’s detrimental. I am very susceptible to illness. Items must be washed and cooked in clean containers. Little fun fact: Food doesn’t have to cool to go into the fridge. The cooler it gets the faster bacteria can multiply. Learnt that at my food safety with the dietician and at Catch moons ago.
