Allergies or Restrictions

I have many DIETARY RESTRICTIONS due to food intolerances. A list of allowable ingredients is provided: APPROVED MEAL INGREDIENTS - VEGGIES: broccoli, baby broccoli, green cabbage, napa cabbage, celery, scallions (green part only, discard white), fresh chives, baby bok choy, zucchini (must be peeled), green beans. - GRAINS & STARCHES: gluten free oats, rice noodles and pasta (I tolerate Thai Kitchen and Jovial brand the best) (I'm not eating steamed rice at this time) - FLOURS/BAKING etc: gluten free oat flour (Bob's red mill), rice flour, tapioca flour/starch (in moderation), baking powder, baking soda, stevia (if no other ingredients) - FATS/OILS: organic sunflower oil, organic ghee (that's it) - OTHER: -- organic chicken eggs -- organic raw almonds (you can toast them) -- oat milk - no sugar or flavors added (Brand suggestions: Califia farms Original or Barista Blend [avoid Califia Zero Sugar and Protein versions], Minor Figures Barsita Oat, Malk -- granny smith apples (if you are going to use them in a recipe, please PEEL them first) -- real salt (check ingredient label as table salt often contains surprise 'anti-caking' ingredients. Himalayan, sea salt, celtic, etc all fine, just no extraneous non-salt ingredients) PLEASE: Do not use anything unless it is on this list without checking first. I do not tolerate any herbs, spices or seasonings. SALT ONLY. PACKAGED SNACKS I love and can eat on occasion: -- Inner Peas from Trader Joe's (Crisp pea snack, plain flavor) -- Mochi Rice Nuggets from Trader Joe's -- Harvest crisps pea snack (plain flavor) -- Organic Unsweetened Applesauce from Trader Joe's (glass jar) - I have successfully used a couple things as bread crumbs in the past, hmu if you're interested in that. Also found a rice paper that works for things like spring rolls. Note: I will not go into anaphylaxis if exposed to foods not on the lists below, so please do not worry - you will not kill me or send me to the ER if you make a mistake. Eating foods beyond those listed does cause flare ups in my condition and makes it more difficult for me to function. Please use whole foods and cook from scratch. Many packaged foods contain corn and sugar hidden within the additives (things like dextrose, cellulose, xantham and maltodextrin are made from corn). I am a vegetarian, no meat or fish please.

I have selected Saturday as the preferred drop off day for a food delivery each week, but this is completely flexible! Please let me know what day works best for you. GENERAL GUIDELINES - Please do not cook if you are sick (or recently had covid or were exposed to covid and have not yet tested negative), or someone in your household is currently sick - All foods must be cooked (no raw vegetables or salads, etc) - Organic preferred whenever possible - If food cannot be delivered the same day it is prepared, please freeze it in individual sized portions asap the day it is prepared and deliver frozen (fun fact: histamine levels rise in food as time passes, even in the fridge) - for the same reason as above, please do not "slow cook" anything (histamine levels), instapot or pressure cooker is fine - In order to avoid cross contamination with foods I do not tolerate to the greatest extent possible, please make sure pots, pans and utensils are well cleaned. - Please avoid cooking in seasoned cast iron or wok unless you know what it was seasoned with and can discuss. - If transporting food in plastic containers, please allow food to cool before storing - If incorporating water into a dish (such as a soup, or making rice), please use filtered water if possible (tap water is fine for boiling pasta or if filtered water is unavailable)
