I know we all love making hearty casseroles and pasta dishes for meal trains, and guess what? You absolutely can for Scott and Jods! You might just need to get a little creative and go heavy on the veggies and skip the meats and cheese & added sugars (they eat fish about once a week and are open to any plant-based meats and cheeses). Recently, the Vandervort's have embraced on a journey into healthy eating (think more plants, less animals). Luckily for us, they are not picky eaters and Jodie has been using Pinterest to help with meal planning for the last several months so there are tons of ideas on her Pinterest board here: https://www.pinterest.com/indigojods/vegetarian-meals/ Excerpt from Scott's blog: Jodie has taken it upon herself to help cure me through food. She’s read more books on healthy eating over the past few months than I can count. Together we have become superfood-eating pescatarians because God forbid we give up sushi. Our Frappuccinos have been replaced with green tea and our ice cream with [low sugar] dark chocolate.
